Over on Outside Mag’s website, I got to talk all about Instant Pots and why they’re basically an awesome athlete training tool. Kind of weird, maybe… but hear me out! You can get home from work, set it up, go on your run/ride/whatever, and come home to dinner being done. So. Good. I chatted with a couple of pros who swear by theirs, and we came up with a few favorite super-easy recipes broken out into how long (or short) your workout is for the day!
Truth: When I got an Instant Pot last year, I was kind of leery. Partially because when I use my (now dead) slow cooker, it’s usually to make A TON of food, because, you know, it takes all day and I want to get a couple of meals out of it. The Instant Pot seemed like a tiny slow cooker to me, to be honest. But I love a good kitchen gadget, so I got it. And then let dust collect for a while. But finally, we had no non-frozen meat in the fridge, it was 5PM and I wanted dinner. We had a pork shoulder, still frozen, and some barbeque sauce. I popped it into the Instant Pot figuring that it would at least end up edible… and ended up with fantastic pulled pork with literally zero effort. It’s my new favorite thing.
